Ingredients

1 # Fresh Pasta Dough

1 # Chandlers Pulled Pork

1# Sweet Potato(s) Baked, chilled, skin removed

2 Tbsp. honey

2 Tbsp. Chopped Chives

1 tsp ground coriander

Kosher salt to taste

Fresh cracked black pepper to taste

Procedure

  1. Combine the last 6 ingredients together and chop to make a uniform mixture for the filling
  2. Using a pasta machine, roll pasta dough into sheets
  3. brush one sheet with egg wash and place a tsp of filling every 2 inches (depending on the size ravioli you want, this will give you about a 2” ravioli)  
  4. Take another sheet of dough and place on top of the first
  5. Press the sheets together around the filling then cut the size and shape you want.
  6. using a fork, seal the edges of each ravioli
  7. Cook ravioli in boiling salted water and either serve immediately, or shock and save for service at a later time.
  8. Can be served hot or cold, as an entree or an appetizer with your favorite sauce.  Also try using standard breading procedure, deep frying and serving with a dipping sauce
