Green Chili Stew
2# Chandlers Pulled Pork (diced or shredded)
1 cup diced onion
2 cups diced green chilies (use your favorite, or a combination of any chilies to create the heat / flavor profile you like)
1 cup diced yukon gold potatoes
4 cups chicken stock
2 Tbsp. ground cumin
1 tsp ground coriander
1 clove minced garlic
Hot sauce to taste (optional)
Salt and pepper to taste
Shredded cheddar cheese, sour cream and cilantro garnish
- Sauté onions in a small amount of olive oil, add garlic and peppers and continue to sauté till tender.
- Add spices, chicken stock and potatoes and cook till potatoes are almost tender.
- Add pork, season with salt, pepper and hot sauce if desired
- Ladle into cup or bowl, garnish with cheese, sour cream, and cilantro
