Still There Pulled Pork Meatballs
3 tablespoons olive oil
3 oz. onion- minced- caramelized
1 ea. clove garlic- minced- caramelized
1 ea. egg- room temp
1/4 cup panko bread crumbs
4 oz. Still There Mustard Shine Sauce
3 oz. Parmesan
1 teaspoon smoked sea salt
1/4 tsp. crushed red pepper
16 oz. pulled pork-finely minced or pulsed quickly in food processor
Heat oven to 350 degrees.
Heat oil and add the onion and garlic, cook till brown. Remove from heat and cool. Place cooled onion, garlic, egg, bread crumbs, BBQ sauce, parmesan, salt and pepper the bowl of a stand mixer and blend. Mix in the pork. Shape the mixture into 1 1/4-inch-diameter meatballs. Place on a large baking sheet.
Place meatballs in oven and cook till firm and just cooked through, about 15 minutes. Remove and cool. Heat grill and place meatballs just off center heat and brush with additional sauce. Turn during heating and baste with sauce. Meatballs should be hot in 5-6 minutes.
